What a way to spend a gorgeous summer’s day – looking out over the super yachts at the Viaduct in downtown Auckland, whilst trialling new salmon dishes for the menu at The Foodstore. Mark Southon and his Black Jackets (aka Sunil & Jeff) all developed their own salmon creations which were then tasted in a 3 way cook off. The resulting dishes were all fantastic.
Mark’s dish was a stunning vanilla confit Ōra King salmon with almond yogurt, apple & wasabi jelly and seasonal vegetables. Sunil came up with a gorgeous dish of Cured Ōra King salmon, coriander namjin with a noodle salad. Jeff’s dish was a completely different spin on curing – a Pepper Cured Ōra King salmon with edamame bean puree and cucumber pickle.
In a nail biting and yet quite delectable taste off, Mark’s dish made it onto the menu – if you want to try this you need to visit The Foodstore. In the meantime, here are the recipes for Jeff and Sunil’s creations.
